The New York Times recently reported some significant flaws in the indexes that determine the price of chicken meat in grocery stores. As it turns out, the prices have been rigged. Of the three primary indexes – the Georgia Dock, Urner Barry index, and the index compiled by the Federal Department of Agriculture (FDA) – used to help set chicken prices, two of them hovered around $0.72 a pound at the end of October. The Georgia Dock index, however, was at $1.10 a pound. This 30 percent gap recently came to the surface and has prompted investors to pose serious questions

As reported by the Washington Post, a significant portion of chicken sold to retailers is based on the Georgia Dock price. Every week Arty Shronce makes a calculation that gives big retailers – such as Walmart and Safeway – an average price for a pound of chicken.

Are chicken prices artificially high?

Where does this high diversion in price come from? It turns out that there’s a reason for this. While the Urner Barry index and the index compiled by the FDA are working to validate the information they get from chicken producers, Georgia Dock does not.

Today, the Georgia Dock index is based on data from 10 of the 11 companies that process poultry in the state. Once a week, Schronce calls facility managers to retrieve information to set the average price per pound of poultry sold.

But how correct are the calculations of a gardening blogger who, according to critics, does not do enough to verify the data he receives. Furthermore, two of the largest American chicken producers – Pilgrim’s Pride and Tyson Foods – seem to have too much sway over how the Georgia Department of Agriculture calculates the chicken price index.

So if the largest chicken producers are telling the Georgia Dock which prices they should use and the information isn’t properly verified, there is a good chance that the prices of chicken meat are artificially high.

Also, data shows that most of the chicken consumed by Americans comes from supermarkets who generally use the Georgia Dock index, so the chances are high that you are paying a lot more for your chicken then you should. (RELATED: Discover more news about fresh food ingredients at Fresh.news)

Georgia Dock doubts itself

Maybe the most remarkable thing about the whole chicken price story is that it was Arty Schronce himself to blow the whistle on his own pricing index. In a memo written to the Georgia Department of Agriculture, he said that he had come to “question the validity of some of the information provided” by local chicken producers. Furthermore, he honestly stated that his training was inadequate, inconsistent, and sometimes in error. Furthermore, he noted that the companies he was required to survey were sometimes unresponsive.

“I often received lackadaisical and rude responses to my requests for information,” Schronce wrote. Sometimes his calls were not returned, or the companies simply responded to his price questions with “just keep ’em the same.”

According to Schronce, it was not the first time he voiced these concerns. He said that he takes his job very serious. However, he noted that it is no longer in his power to do it adequately and blames the Georgia Department of Agriculture and the reporting poultry companies for the misleading prices.

In their defense, McPeake, of the Georgia Department of Agriculture, said a review process began in December 2015 after “serious concerns” emerged. She added that even though Schronce’s training “may have been abridged due to unfortunate and unforeseen circumstances, every effort was made to ensure that he was indeed trained on some level.”

As stated by The Wall Street Journal, Georgia Dock has apparently responded to their shortcomings and will require companies to submit additional data to verify the accuracy of the information.

Like this one: Researchers at the Massachusetts Institute of Technology (MIT) just discovered that, even at high temperatures, water freezes solid when it is placed into tiny tubes.

That discovery was a complete surprise to a team of chemical engineers that was led by Prof. Michael Strano, who was attempting to send electric currents through water in small nanotubes. (RELATED: See more science news at Scientific.news)

“We noticed unexpected changes in some measurements and discovered that the changes resulted from heating,” said graduate student Lee Drahushuk, who co-authored a paper that laid out the details of the discovery.

“From there, we varied temperature systematically and realized the changes were an effect of a phase transition between liquid and solid water inside the nanotube,” he told Digital Trends.

Distorting water’s phase behavior with small nanotubes

Researchers then decided to analyze the water’s behavior even further, but were surprised by just how strange that behavior was. At a temperature well beyond the usual boiling point for water – at least 105° Celsius (221 degrees F) – the water in the nanotubes had frozen solid. Indeed, the direction of the phase transition and the degree was far more than anyone had anticipated.

“If you confine a fluid to a nanocavity, you can actually distort its phase behavior,” Strano said, in reference to when and how substances change between solid, liquid and gas phases.

According to a press release from MIT, those effects were anticipated, but the enormity of the change and the direction it took (raising rather than lowering the freezing point) were not expected at all.

In one test conducted by the research team, the water solidified at the 105° C mark, though the exact temperature is difficult to determine; 105° C was considered to be the minimum value in the test, while the actual temperature could have been as high as 151° C.

The researchers said that they found water’s changes inside the tiny, straw-like structures depended very much on the exact diameter of the tubes. Strano said that those used during the testing were “the smallest pipes you could think of.” According to the press release, the nanotubes were left open at both ends, and there were reservoirs of water at each opening.

Even the fractional difference between nanotubes 1.05 nanometers and 1.06 nanometers exhibited differences of tens of degrees in the freeze point, the team found. These extreme differences were also a complete surprise.

“All bets are off when you get really small,” Strano said. “It’s really an unexplored space.”

It is a surprising discovery that water even flows into the minuscule tubes in the first place, said Strano. Carbon nanotubes are believed to be hydrophobic – that they repel water – so water molecules should have a difficult time entering the passageway. That they do, after all, remains a mystery the team could not solve.

‘Not necessarily ice but ice-like’

Strano and his research team used very sensitive imaging systems to conduct their tests with a technique known as vibrational spectroscopy, that allowed the scientists to track the water’s movement inside the nanotubes, thereby making that behavior subject to detailed measurement for the very first time.

The team was not only able to detect water’s presence inside the tube, but also the phase it was in.

“We can tell if it’s vapor or liquid, and we can tell if it’s in a stiff phase,” Strano said. And though the water most definitely enters a solid phase, the team has refrained from calling it “ice,” because that is a term implying a particular crystalline structure, which has not yet been conclusively demonstrated.

“It’s not necessarily ice, but it’s an ice-like phase,” said Strano.

The team’s discovery was described in a paper published this week in the journal Nature Nanotechnology, reported Digital Trends.

The judge ruled against the beekeepers and public interest advocates in their lawsuit — which was seeking to protect bees, and the rest of the environment, from unregulated damages that may be caused by the Environmental Protection Agency’s rather sloppy policies regarding seeds that are coated with certain insecticides that are known to kill bees in large numbers.

Andrew Kimbrell, Director of the Center for Food Safety, said, “It is astounding that a judge, EPA or anyone with any common sense would not regulate this type of toxic pesticide use, especially when the seed-coatings are so broadly applied and there is so much at risk. Study after study has shown that seeds coated with these chemicals are a major culprit in catastrophic bee-kills. Now more than ever our country’s beekeepers, environment and food system deserve protection from agrichemical interests, and it is EPA’s job to deliver it.”

Kimbrell’s lamenting of the ruling is easily understandable; we know neonics are harmful pesticides and yet, our bureaucratic government is doing nothing to stop the damage.

Neonics have been linked to record all-time highs of colony deaths, water pollution, and are known to pose risks to other valuable species, like birds.

Earlier this year, the federal government itself released a report admitting that neonics are harmful and have been causing catastrophic bee deaths across the country. The findings were part of the first scientific risk assessment to conducted on this type of insecticide and their affect on bee populations. Indeed, the government’s own report confirmed what many activists and beekeepers have been saying for years: neonics weaken, disorient and kill honeybees.

The analysis particularly highlighted the harmful nature of imidacloprid, showing that it clearly caused damage to beehives and honey production. The EPA itself confirmed that when bees are exposed to imidacloprid at concentrations of at least 25 parts per billion — a pretty standard amount on crops — they suffer grieviously.

“These effects include decreases in pollinators as well as less honey produced,” the EPA’s press release states.

The report on imidacloprid is very concerning — but what is perhaps even more concerning is the fact that this report focused on just one, singular neonictonoid, when there are in fact several used nation-wide. It is not just one form of this insecticide that has been indicated as harmful — it is the entire class of neonics that many have found to be problematic.

What is most concerning about seed coatings containing neonics is that they are not exactly regulated  well. The group of beekeepers who filed suit against the EPA did so for this exact reason. Seed coating is the most prolific form of neonic use — and yet the EPA has never conducted safety testing on this use.  Toxic dust floats in the air every spring after corn is planted, thanks to neonic seed coatings, and it is this dust that is what is often most problematic.

Beekeeper Brett Adee lost more than 6,000 hives last spring during corn planting. A state investigation concluded that his bees were poisoned by a neonic that was used on the seeds his neighbors had planted. Mr. Adee is not the first beekeeper to lose his bees to insecticides, and he surely won’t be the last — given that the EPA has exempted seed coating from regulation.

When dismissing the case filed by beekeepers and advocates, the judge proclaimed, “The Court is most sympathetic to the plight of our bee population and beekeepers. Perhaps the EPA should have done more to protect them, but such policy decisions are for the agency to make.”

What is galectin-3, and what does it do?

Galectins are a group of proteins that belong to the lectin family, characterized by their galactose-specific carbohydrate recognition domain. Galectin-3 is one of the most studied galectins, and research continues to show that it is both directly and indirectly connected to cancer cell activity and may contribute to cancer progression in a number of different ways, including cancer progression and metastasis.

Galectin-3 is not all bad, though. It is produced by the human body and is necessary for tissue growth and repair. Excessive production of the protein, however, is likely to become problematic. An excessively high level of galactin-3 is a biomarker for cancer, as well as a strong indicator of heart disease and kidney disease. Researchers now believe that in addition to being an indicator of disease, galectin-3 is also capable of encouraging the growth and spread of cancer.

One of the functions of galectin-3 is to actually stoke immune system response and create inflammation, to help destroy invading pathogens after tissue damage. In cases of injury, galectin-3 serves to help “seal off” the area by causing chronic inflammation.

Galectin-3 promotes cancer growth and proliferation in a few different ways. Essentially, it makes it easier for cancer cells to adhere to the walls of blood vessels, and in this way, helps the cancer spread. The protein is also produced by cancer cells themselves, which can further their proliferation. Galectin-3 is also said to help malignant cells escape apoptosis, or programmed cell death. In turn, these cancerous cells can continue to multiply, and produce more galectin-3.

Fortunately, there appears to be a natural way to curb this vicious cycle.

Modified citrus pectin: what it is, and how it can help

Modified citrus pectin, or MCP for short, is a complex carbohydrate, similar to the natural pectin found in fruit. Pectin contains galactosides (sugar molecules), which are capable of bonding with galectin-3. The binding activity of MCP’s galactosides to galectin-3 blocks the protein’s damaging behavior and disrupts its signaling abilities. To put it simply, MCP essentially shuts down the galectin-3 protein and stops its harmful effects in their tracks. This could be useful not just in cancer treatment, but in other areas as well.

In an animal study, MCP not only inhibited the levels of galectin-3, it also reversed inflammation, fibrosis and thickening of blood vessel walls. This finding suggests that in the instance of heart disease, MCP can help to reverse the damaging effects of excessive galectin-3, and undo the changes that can often lead to heart failure. Studies have also shown that MCP can stimulate the immune system and boost production of natural killer cells, which can locate and destroy cancer cells. Several different studies have illustrated these potential cancer-killing effects. For example, a study published in 2015 by the journal PLOS One found that MCP induced cell death in two different types of cancer cells. Another study, published by BMC Complementary and Alternative Medicine in 2011 found that MCP activated natural killer cells that were then able to target and destroy leukemic cancer cells.

Other studies have also shown that MCP may be able to help stop cancer from spreading to other areas. In animals, MCP has been shown to prevent skin cancer from spreading to the lungs, and has also prevented colon cancer from spreading to the liver.

Perhaps citrus pectin will prove to be the next all-natural cancer cure. While this research is only the beginning, it is certainly promising. Who knows what independent science could reveal next.

For teenagers, sugar-sweetened beverages are their primary mode of consuming added sugars. (RELATED: Learn more about disease promoting food ingredients at Ingredients.news)

According to the BBC, a five-year-old child should have no more than 19g of sugar in a day, a 10-year-old no more than 24g. Teenagers and adults should have no more than 30g. And yet, a single can of soda contains 9 teaspoons of sugar — equivalent to 35 grams!

The survey data analyzed indicates that teens in the UK consume more than 234 cans of soda per year, on average. National Diet and Nutrition Survey data from 2008 to 2012 indicates that the average teenager in the United Kingdom consumes 74 grams of added sugars every day, which equates to 15.6 percent of their total calorie intake. A staggering 40 percent of that added sugar comes from soft drinks.

Of course, teens in the United States have not fared much better. Reports have indicated that adolescents in the US get a whopping 20 percent of their total daily energy intake from added sugars. Half of that sugar comes from sugar-sweetened beverages like sodas, sports drinks and energy drinks. What happened to drinking water?

Mass overconsumption of sugar is a problem in both the United States and the United Kingdom — that is very clear. There are many ill effects associated with excessive sugar intake. The current prevailing theory suggests that taking in too many calories will increase your risk of becoming overweight or obese — and it is this obesity that increases your risk of diabetes. Many scientists are still debating on whether or not sugar can increase your risk of developing this condition as well, but the evidence is surely mounting.

Researchers from the Stanford University School of Medicine, the University of California-Berkeley and the University of California-San Francisco examined ten years of data from 175 different countries and their findings were published by the journal PLOS One in February 2013. This large-scale epidemiological study has indicated that sugar consumption can indeed influence your risk for developing diabetes, independent of your body weight.

The study’s lead author  Sanjay Basu, MD, PhD and assistant professor of medicine at the Stanford Prevention Research Center, says that their data suggests that at a population level, there are additional factors that can contribute to diabetes risk besides obesity and total calorie intake.  While Basu says that their findings do not diminish the importance of obesity as a risk for diabetes, he states that sugar appears to play a prominent role.

Their findings were really quite shocking. Their data revealed that for every additional 150 calories of sugar available per person per day, the prevalence of diabetes in the population rose 1 percent, even after controlling for obesity, physical activity, other types of calories and a number of economic and social variables. Conversely, 150 additional calories from any type of food only created a 0.1 percent increase in diabetes prevalence.

In other words, sugar has ten times the impact of other foods on diabetes risk, at a population level. More shocking still, is the fact that the researchers also found that the longer a population was exposed to excess sugar, the more this risk continued to increase. The diabetes rate continued to increase along with time exposed to excess sugar, independent of other risk factors like obesity. However, when sugar availability diminished, diabetes risk also decreased, independent of other changes to calorie consumption, physical activity or obesity rates. This finding demonstrates the very real risk that excessive sugar consumption poses. Some research has indicated that teenagers may be particularly susceptible to effects of sugar, as well.

It is clear that kids today, and adults, are eating way too much sugar, and it is putting their health at serious risk.

The study was led by the Center of Alcohol Marketing and Youth through the Johns Hopkins Bloomberg School of Public Health. The results were published in a special issue of the journal Addiction focusing on alcohol marketing and public health. They have shown not only an increase in underage drinking, but also in binge drinking.

The studies looked at the effects of exposure to marketing and ads on television, internet, radio, print, social media, and at sporting and other events. There were more than 35,000 participants across seven countries. What has been found is that alcohol is the leading cause of death and disability in men ages 15-24 around the world and in women of the same ages in wealthy countries and America. More than 4,300 deaths are caused by underage excessive drinking every year in the United States alone.

Binge drinking as defined by the Centers for Disease Control and Prevention is four or more drinks in 2 hours by women and five or more drinks in 2 hours by men. Approximately 11 percent of all alcohol consumption in the United States is done by youth aged 12-20 years, with the majority being binge drinking. The effects of binge drinking have been found to include negative public health consequences, such as attempted suicide, violence, illicit drug use and sexual assaults according to the CDC. It has also been found that those who begin drinking before the age of 15 have a higher chance of developing alcohol dependence or abuse further down the road than those who began drinking later in life.

In the United States, marketing and advertising is self-regulated primarily by the alcohol industry themselves, leaving much to be desired. There has been sufficient evidence that marketing exposure has been nearly as high or as high among youth as it is among older teens and young adults. The alcohol industry’s voluntary marketing codes are not stopping advertising from reaching children as young as 10 years old. “Public health policies that can reduce or mitigate the effect of alcohol marketing exposure on youth drinking behavior are sorely needed,” study leader David Jernigan, PhD says. “With numerous countries considering greater restrictions on alcohol marketing, the findings of these studies signal the public health importance of that debate.”

Several ideas have been put forth as ideas to help control the marketing that our youth will see in regards to alcohol. Some of these include a comprehensive ban on advertising, statutory regulations enforced by an appropriate public health organization, and regulations independent of the alcohol industry, whose primary concern is growing profits.
